Perry is made in a similar way to cider
but with perry pears instead of apples.
Perry pears are small and hard and are totally
unsuitable for eating. There are many different varieties,
each giving its own individual characteristic.
Perry is a much 'softer' drink than cider, lighter
in colour, and has been likened to fine wine in its delicate
flavour. It has been enjoyed in this part of the country for
centuries.
Perry pear trees are becoming increasingly scarce.
New trees are being planted, but the old adage "plant pears
for your heirs" means it will be many years before these trees
come into full production.
The pears I use for my perry come from an old
orchard on a farm about ten miles east of Wigmore.
